My exciting weekend + Monday Meal Preps

Happy Monday! I had a very big and exciting weekend to share, but first things first. I’M ENGAGED!!!!!!!! Chris proposed to me Saturday night.

So let’s recap.

FRIDAY

After work, I went to do my outside run with Marvel. My shins were KILLING me too. I only managed to do 1.5 miles since they were scorching. I did the mile in 13:40 mins.

I caught the kids laying together too, finally. That was super cute.

I then started to make cupcakes for Chris’ birthday. He loves red velvet cupcakes so I made those from scratch. I have a really yummy recipe that I’ve had for 15 years. Not sure where I originally got it, but here is the recipe.

RED VELVET CUPCAKES

Serves 10

1 cup cake flour

1/4 cup unsweetened cocoa powder

1/2 teaspoon salt

2/3 cup vegetable oil

3/4 cup sugar

1 egg

1 teaspoon vanilla extract

1 tablespoon red food coloring

1/2 cup buttermilk

1/2 teaspoon baking soda

3/4 teaspoon white vinegar

Preheat oven to 350.

Mix cake flour, cocoa powder and salt together.

In a bowl, mix oil and sugar together until well blended. Add the egg and mix well. Add the vanilla and food coloring. Add flour mixture alternately with the buttermilk. Mix until just combined. Do not over mix.

In a small dish, combine the baking soda and vinegar. Add to the batter and beat for 10 seconds.

Scoop batter into baking cups and bake 20-24 minutes or until done. Top with your favorite cream cheese icing.

After making cupcakes, I signed up for a one month trial for yoga at Studio Bamboo. I’ve been really wanting to get back into practicing more, and heard good things about this place. I went to a foundations class where I found out just how incredibly flexible I am NOT. HA.


SATURDAY

Saturday started out really great because I did a mile in 10:50mins and did 3.4 overall while I watched a show on hulu. We relaxed most of the day until we had to drive to Williamsburg to do dinner with his parents. We went to the Fat Canary, which is a fancy place is colonial Williamsburg. Right outside the restaurant was a Virginia is for lovers LOVE sign. They are all over this state for touristy type pictures. At dinner I had the salmon with capers and beets and Chris had the steak (which was unbelievably good) and asparagus with steak fries. After dinner, he had a chocolate brownie with ice cream that he was super excited about.

After we finished eating, Chris suggested we all take pictures next to the LOVE sign. We took pics of his dad and stepmom first. Then we went to take pictures. After we snapped some images he proposed. I am pretty sure I blacked out most of it because I don’t remember him even saying my full name, or showing me the ring. The ring belonged to his mom and grandma and now me. Pretty special! I think even now I’m still pretty shocked. I’ll be working on a post soon for how we met, etc. Stay tuned.


SUNDAY

I’m pretty sure this is how my Sunday went, because we were eating SO bad today.

I did just a mile today since I was so busy, the time for that was 11:28 mins.

I spent a majority of the day meal prepping (literally 6:30am-3pm and then again at 830pm) More on the prep down below. We also went out to dinner for Chris’ birthday with some friends which actually turned into an engagement dinner. Hibatchi is always a fun time…but I’m definitely bloated from it now!

Chris blew out his birthday candles finally, even though he was eating the cupcakes the whole weekend.

Marvel was very unsure about the balloons I got Chris. I think maybe because they are DC…

What a weekend! It was insane and so many calls, texts, messages. Now to start the planning.

MEAL PREP

So, Chris and I started Whole 30 today. Round 2 for me and Round 1 for him. I’ll be posting more on Whole 30 tomorrow so let’s start with all the meal preps I did for 2 people.

For breakfast I made the potatoes and egg dish. Pairing that with cashews and 2 clementines each day.

For lunch I made us spaghetti squash (I use this site for how I make it) with spaghetti sauce and ground beef. Pairing that with coconut and an apple to rounds out the meal.

So many containers!

For dinner I made chicken salsa verde in a crock pot (used this recipe) and pairing that with carrots and guacamole.

I was exhausted from all the cooking, but at least our preps are done and we don’t have to cook at all this week!
